Brush Goat Hair
Wash your hands. It's a simple act. For anyone who handles food, proper hand washing can mean the difference between safe food and serious illness for the people they serve.
Everyone's hands have a large population of microorganisms, chiefly bacteria, and a few yeasts and fungus. The organism can be divided into two groups, resident and transient. Resident microorganisms live on the hands all the time. Most of them don't make us sick, and they help with the skin's task of preventing more dangerous bacteria from getting into the body. Transient microorganisms include most of the ones that cause disease. They arrive at the skin either by direct contact, i.e. the hands touch something where the microorganism lives, or by aerosol, airborne germs landing on the hands. Once on the hands, these transient organisms hang around like thugs on a street corner, waiting for a disruption in the body's disease prevention system that will allow them to infect the body. While they're waiting, they're also able to be transferred to something else, such as food.
The goal of handwashing is to reduce the population of microorganisms on the hands, especially the bad actors in the transient population. Dr Peter Snyder of the Hospitality Institute of Technology and Management has studied the ways that transient germs get onto the skin and the best techniques for removing them.
He reports that touching almost anything-hair, money, shoes, a dirty uniform, the floor, soiled cleaning equipment-can bring hands in contact with transient germs, but the most dangerous source of contamination is contact with fecal material when a food handler defecates. Most people think of toilet paper as a protection against contact with fecal material, but in fact there are no performance standards for toilet paper: strength when wet, resistance to tearing, and absorbency all vary widely. It is a mistake to assume that toilet paper will reliably protect hands from fecal contact.
The most effective tactic is a thorough hand washing, including the use of a nail brush. Although most restrooms have a sign posted reminding food handlers to wash their hands, the more effective place to do the washing is in the kitchen, where a sink, a nail brush, soap, and freely running warm water, between 115 and 120 degrees, can be provided, and reliably monitored.
The soap should be capable of working up a good lather, because the lather is required to remove the material, such as dirt or feces, in which the microorganisms are lodged. Antibacterial soap is not required, and when used very frequently can irritate the skin. Any good soap that creates a lather will get the job done.
Hand washing is a two step process. In step one, wash with soap and scrub under and around the fingernails with a soft brush, working up a lather. The brush dislodges particles of dirt, food, fecal matter, and other materials that have collected under the fingernails. Rinse under flowing water until all the lather is gone. The dangerous microorganisms are now in the lather, and the job's not done until they're all rinsed away.
Step two is another wash, without the brush, lathering all over the hands, between the fingers, and up to the wrists. Rinse again under continuously flowing water, and be sure all the lather is rinsed away. Dry thoroughly with an unused paper towel. Leaving hands damp provides an attractive growth site for any remaining bacteria. Paper towels are preferred to air blowers, which have been shown to blow airborne germs air onto hands.
Getting employees to understand the importance of handwashing is a continuing task. New employees must be educated about the need for handwashing, and taught the correct procedure. Review and retraining is also essential. It takes commitment on the part of management and employees, but once a culture of handwashing is established, a food service operation has assured itself and the people it serves of a vastly safer experience.
